"Your Carribbean Escovitch Whole Red Snapper was truly an international adventure! Thank you for educating my family, and encouraging us to go outside our comfort zone and try something new! When you told me that the head was a delicacy, I was hesitant, especially because it still had the eyes and teeth. However, my kids were ALL about the head! What a yummy lesson in science and culture, and how when introduced to REAL food, kids love it! We also loved the pickled bell pepper and onion salad. It was sweet and vinegary, and the fresh thyme was a really unique flavor that complimented it very well. Thank you for being so conscious of our health concerns- instead of using the regular seasoning that had MSG and food dyes, you effortlessly from scratch whipped up a traditional yellow rice with turmeric, cardamom, garlic and onion that felt so authentic and delicious! "We are on a very limited diet due to allergies, and Chef Katie is just so thoughtful in making adjustments to provide us with tasty food that doesn’t make us feel like we are missing out on anything! She prepared a stir fry using coconut aminos instead of soy sauce, and she added so many vegetables that it didn’t feel like we were missing out on the eggs. Great dinner!”
